Ingredients for Date Cake Recipe
- 2 cups pitted dates
- 1 cup hot coffee
- 10 tablespoons room temperature butter
- 1/4 cup brown sugar
- 2 eggs
- 1 1/3 cups flour
- 2/3 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat oven to 350 degrees.
- Chop the dates into small bits and place in a bowl.
- Add coffee and allow to sit over the dates for several minutes, until the dates begin to soften.
- Prepare a cake pan by greasing with butter then dusting with cocoa powder.
- Beat the butter until light and fluffy then add sugar and continue to beat for 2 minutes.
- Begin adding the eggs one at a time to the butter and sugar mixture.
- In a separate bowl, combine the flour, remaining cocoa, baking soda, and salt.
- To the dry mixture, add the eggs, butter, sugar, dates and coffee and mix until combined.
- Pour batter into the cake pan.
- Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
- Cool cake on a wire rack.
- Serve with whipped cream.
